Celebrating British Pea week is Bea's simple and speedy homage to some delicious summer produce!
Serves: 2-3 people
Time: 15 minutes
* indicates optional ingredients
Ghee or butter
5 spring onions
Handful of lettuce, shredded
*other seasonal greens i.e. sorrel, rocket etc.
Knob of butter
Heat up some ghee and let the spring onions soften in the pan, stirring from time to time.
Add in the stock and bring it to a gentle boil, and simmer for a couple of minutes
Throw in the peas, lettuce (or any other greens that tickle your fancy), season with salt and let it reduce until the peas are as tender as you like, the greens are as soft as you like and the liquid is as reduced as you like.
A knob of butter and a grind of black pepper round the dish off perfectly.
