Egg drop soup is traditionally a Chinese dish that you'd see as a starter at most Chinese restaurants. However, we've taken to this simple and wonderfully nutritious recipe as a light lunch that can be whipped up in minutes with a few whole and healthy ingredients.
Cooking time 5 minutes. Serves 2.
INGREDIENTS • 2 pouches of Borough Broth organic chicken bone broth. • 4 free-range organic eggs. • spring onion, chives and sesame oil to season.
METHOD: 1. Bring the broth to a simmering boil in a pan. 2. Meanwhile, whisk your eggs in a bowl. 3. Once the broth is gently simmering, use a spoon to stir and create a slow and gentle whirlpool. 4. Gently and gradually pour the egg mix into the whirling broth. The eggs should ribbon and cook. 5. Remove pan from heat and pour contents into a bowl. Garnish with chopped spring onion, chives and drizzle with sesame oil.
