Curly Kale Quinoa Salad

Serves: 4
Cooking time: 30 minutes

Ingredients:

½ cup quinoa

a few handfuls of curly kale

1 pouch Borough Broth Co. Organic Chicken Bone Broth

1 mango

handful of strawberries

1 avocado

cashew nuts

2 tablespoons lemon juice

2 tablespoons olive oil

salt 

black pepper

Method:

  1. Add quinoa and broth to a pan and cook according to quinoa packet instructions and leave to cool.
  2. In a small bowl, combine the lemon juice, olive oil, salt and black pepper to create the dressing.
  3. Wash and cut curly kale and add to a large bowl and top with the dressing and massage into the kale.
  4. Add the quinoa to the kale and mix together.
  5. Cut the strawberries, mango and avocado and add to the large bowl.
  6. Sprinkle the cashew nuts and top and mix together, and serve in smaller bowls.
