Leek and Prawn syNbiotic Soup

This is great for the gut in so many ways – you have leeks which contain prebiotic fibres called inulin which feed good bacteria in the gut, plus lots of variety which promotes gut health too (from the flower peppers the ginger, and olive oil). PLUS the miso and tamari bring probiotic live bacteria to your gut too. Meals that have prebiotics AND probiotics are known as syNbiotics and this meal is a perfect example of that.

Ingredients:

1 leek, ends chopped off and finely sliced

1 tsp Sichuan flower peppers (or use normal dried chilli flakes)

2 cm of fresh ginger, peeled

1 clove of garlic

1 tbs extra virgin olive oil

handful of cooked prawns

½ pouch Borough Broth Co. Organic Apple, Miso and Seaweed Bone Broth

splash of tamari or soy sauce

1 tbs of rice vinegar

Method:

  1. Chop the leeks.
  2. Crush the Sichuan flower peppers, ginger and garlic in a pestle and mortar
  3. Saute the leeks, and when softened, add the flower peppers, ginger, and garlic and stir fry for about five minutes.
  4. Add the prawns and miso broth and heat through.
  5. Serve and enjoy!
